Maurice enlisted the help of two young French friends

and preserved a style of rosé that speaks less in fruit and more in texture

but to our business as well

Its terroir produces wines of balance

jasmine notes of honeycomb and just touches of nutmeg spice

decided to use heirloom corn to make bourbon

or a winter plate of celery root purée and sautéed mushrooms

The fruit was destemmed and fermented using native yeasts

They remind us that wine can be both immediate and eternal— delicious tonight

I have no doubt that this is on an exquisite course for 50-year aging
